Amy's 6/22-6/28 dinner plan

Sunday:
Beef Stroganoff (lots of points, I'm sure. I've just been craving it so I had to do it.)

Monday:
Pita Pizzas (click here)

Tuesday:
**Couscous w/feta 'n' tomatoes**
1/2 c. boiling water
1/4 c. sun-dried tomatoes (not in oil)
8 oz. vegetable broth
1/2 c. + 2 Tbsp. uncooked couscous
1/4 c. crumbled feta
2 Tbsp. minced fresh parsley
1/4 tsp. dried oregano
1 1/2 tsp. lemon juice
1/2 tsp. water
1/2 tsp. olive oil

1. In a small bowl, pour boiling water over tomatoes; let stand for 5 min. Meanwhile, in a small saucepan, bring broth to a boil. Stir in couscous. Remove from the heat; let stand, covered, for 5 min or until broth is absorbed.
2. Drain and chop tomatoes; add to couscous. Gently stir in the remaining ingredients. Serve warm or chilled.
(3 servings - 3 pts each)

AND

**Chicken Parmesan**
(I've never made this. I just needed something to go along with the couscous. I'm going to pour a measured amount (1/2 c.) of our favorite spaghetti sauce over a chicken breast half (3 oz), and sprinkle with 1 Tbsp. Parmesan, and bake)

Wednesday:
**Grilled Burritos**
2 big LF Mission tortillas
1 c. FF refried beans
2/3 c. WW shredded cheese
2 tsp. olive oil
green onions, garlic powder, season salt, pepper

This makes two huge burritos. Fold each tortilla in half, put in half the ingredients, season to add flavor, and cook in a skillet w/olive oil. I think they're about 7 pts each)
We like to dip in FF sour cream and salsa.

Thursday:
**BBQ Chicken and Black Bean Pizzas**
2 6-in pitas
BBQ sauce
Cubed chicken
WW shredded mozzarella
black beans
1 red onion
cilantro

Place rack in center of oven. Preheat to 450ºF.
Spray a nonstick skillet and stir-fry chicken over medium-high heat, about 10 minutes. Transfer chicken to medium-size bowl and toss with half barbecue sauce.
Place pita on a baking sheet. Sprinkle with cheese. Arrange chicken and black beans over crust; sprinkle with onion and cilantro. Drizzle with remaining barbecue sauce; add remaining 3/4 cup cheese.
Bake 10 minutes or until cheese bubbles.

(This will be the first time I make this. It's a modified version of a WW recipe. Once I make it and figure out good ingredient amounts/points values, I'll come back and edit this post)
