Mom's Black Bean & Turkey Sausage Soup

Ingredients:
1/2 package Oscar Meyer smoked turkey sausage
1/2 box (or 16 oz.) chicken broth
1 can black beans (drained & rinsed)
1 can petite-diced tomatoes

Directions:
Chop sausage into bite size pieces (quarters work well)
Heat in sauce pan till heated through
Pour in tomatoes with juice
Add beans
Cook over medium heat until hot

*Good with cornbread
*Can add salsa for a different flavor

Amy's Black Bean Soup

Ingredients:
1 tsp. minced garlic
1 small onion, chopped
1 c. chicken broth
(2) 16 oz. cans black beans
(1) 16 oz. favorite salsa
4 tbsp. lime juice
2 tsp. ground cumin
1/2 tsp. crushed red pepper
Optional:
sour cream
fresh cilantro
shredded cheese
Frito chips

Directions:
Place 1 can of beans and broth in blender. Blend until smooth. Coat a saucepan with Pam. Cook garlic and onion until tender, about 5 minutes. Add blended beans, remaining beans, salsa, lime juice, cumin and red pepper. Bring to boil. Reduce heat, simmer for 25-30 min., stirring occasionally. Garnish with sour cream, cilantro, shredded cheese and Fritos (optional).

Amy's Bran Muffins

Ingredients:
1 c. water
2 c. Kellogg's All bran
2 c. buttermilk
2 large eggs
2 & 1/2 c. wheat flour
2 & 1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. Splenda
3/4 c. sugar
1/2 c. unsweetened applesauce

Directions:
Boil water, pour over All bran and let sit for a while. Mix remaining ingredients in separate bowl. Fold in bran. Let sit over night or for a few hours. Cook at 400 degrees for 15 minutes. Makes 24 muffins.

Turkey Burgers with Cranberry

Add this to the "Family Faves."

Turkey Burgers with Cranberry


Ingredients:
1 1/3 lb ground turkey breast (Also good with ground hamburger meat)
2 rounded tbs prepared horseradish
1/3 lb sharp white cheddar, diced into 1/4 inch pieces
2 scallions, finely chopped
1 rounded palmful grill seasoning
Extra virgin olive oil (EVOO)
Spicy brown mustard
4 large hamburger buns
1 can whole-berry cranberry sauce
Romaine lettuce leaves

Directions:
Heat a non-stick skillet over med-high heat.
In a medium bowl, mix together the meat, horseradish, cheddar pieces, scallions and grill seasoning.
Form 4 patties and drizzle with EVOO.
Cook the burgers for 5-6 min. on each side.
Spread mustard on the bottom bun, cranberry on the top and top with lettuce.
